A day trip in CT...

So... Connecticut is boring.

I started the day bright and early, with a 5am workout, when I finished working out @ midnight for my Saturday workout. Risa and I started the day with coffee and breakfast around 8:45 at Dunkin Donuts.


I started with a "Lite Latte" pretty good and only 80 calories. I'd suggest it if you want a coffee and dont want to kill your calories for the day. I also had a Egg and cheese "wrap" it was good too, and 180 calories!


After we headed south towards the coast.. however we were quickly diverted when looking for a shopping center (which turned out to be more like a Bed Bath and Beyond)... :( HOWEVER... we stumble upon an amazing slize of heaven. Chimirris Pastry Shop


Seriously this place was your true authentic Itallian place. OMG. I got a Ricotta Cannoli. WOW.... I was soooo tempted to stop on the way back ;)

I also got a lace cookie and almond biscotti, however I havent tried them yet. :) This place also ships anywhere in the US. Hmm... weekly cookie orders for churches... I WISH :)

Now... after this we drove.. and drove.. while taking pictures :)








Ok... now we finally made it to something remotely exciting!!!!

After the beach we went to the Clinton outlets for some retail therapy.



So... after this its about 2 and were getting hungry. Sounds easy enough to get food. right? NO. Everything was closed or totally sketchy. So about 3:30 we found lunch at this hole in the wall Second Pouquonck Grinder (aka sandwich shop!).




I would have took a picture of my sandwich but i was too hungry! :)

Oh and heres a good laugh. Risa pumping gas!!! :)


Lastly... this has to be the best name for a chinese place... klassy.



So I will end with this. I do not suggest taking a vacation (hell let alone a day trip here. Its BORING.

You get a CADDY on the East Coast. :)


Oh yeah. Thats right we rented a car and got to upgrade for a nominal fee to a Caddy SUV. I have to admit its pretty pimp. My Snookie bump in my hair, and the caddy had me wanting to fist pump and head up to the Jersey shore :)

I loveeeeee the gym here (well minus the 3 channels that work...) yeah about that -- boo. Well its 12:10... i need to get cleaned up, and were going to get up early to see CT!

Losing never felt so good...

I am down 26.2 pounds so far! While my goal was to hit 30 by tomorrow... I am close. I know I worked hard, and I did things the right way so I am happy about that.

It's a beautiful day, I have to get things ready for my trip to Windsor Locks, CT (Hartford) any suggestions for up there?!?!? Well I gotta head up to Blair to meet with a client - happy FRIDAY all!

Shhh...!!!

But I've been "breaking" the TD rule on weighing this week. Let me say its MOTIVATING. I am now down 25.8 total. As you may all recall my GOAL was to loose 30lb by this weekend. So I have been working hard the past week. I think I am going to be close, and maybe do it!!

I just got back from a nice brisk walk with the pups. Oh how they loved being outside again. It was cute because Lola walks (errr I mean prances) and always keeps her head up looking around. Lucy (aka sled dog)keeps her head down and a low profile. Its quite cute. :) It looks like she is constantly sniffing for food. Hell who am I kidding, she probably is. :)

I leave for CT on Saturday morning, and I have some things to prepare for. I am a presenter so I need to polish what I am going to say (I know it but... I am a perfectionist) :)I also want to go pick up a new shirt or two... since mine are all getting too big -- HOLLER!

Are you a DINK?

What is a DINK you ask? (Don't be ashamed.. I had no idea).

Double Income No Kids. Yes I am, and I am content (for now). A few weeks ago Jon's new co-worker referred to him as a DINK, and Jon was like huh? Apparently this co-worker has a a love hate for us. (He also think's we must be millionares) oh and he think's were "ballin" since we bought a new Passat (I wish you could have heard me laughing!)

On the diet front, I gained a pound, but now I am back down (since I cheated and weighed myself). For 20.8 total. I had a chat with TD, and he lowered my calories to 1500 (from 1700). Now up until last week, I had'nt maxed out (with an exception 1 or 2 times). Since Friday I've been staying under 1150 daily so thats good :) Workouts are more enjoyable since the weather is finally turning around.

Lucy and Lo are cute as ever (as they always are when I have been out of town!)

Work is FANTASTIC. I am #2 in the country players! This is HUGE. Normally it takes a few years to get to that - so I am quite proud. :) Speaking of, anyone want to buy an ad. ;)

On a personal note, from the success of work, in the past I made some poor decisions to use credit cards/debt. Now, I have always always always paid perfectly, however I had debt. To the tune of 20k. I am now down to 4k, which should be paid off in the next month or two!! :) All since last January. We do have 2 car loans, on 0% so we plan to keep chunking $ to 401 k's, mortgage ect. Until were no longer DINK's :)

Well, I had better get prepped for my "video" that I need to tape for our sales conference. It should be interesting.. :)

On the road again...

Well I am in Denver, on a layover for a few hours! I am excited to get home to Jon and the dogs!

I had a nice flight, and highly productive at that. It was pretty empty, so I had the whole row to myself, and I was able to spread out and get work done. I have everything done, that I can for tomorrow, until I make some additional follow up calls. So holler for that.

Thankfully the housekeeper is coming, since I am sure Jon (or I mean the dogs) have left a mess.

On a side note, this brat in front of me keeps swinging his belt (think rubber suspender style). Its nearly hit my laptop a few times, and I am just waiting for it to fling back and hit me. I hate bratty kids.

Ok diverting back to my post.. :) This weekend, will be busy getting things done around the house, playing with the new camera. Easter pictures for our Godson and his brother Kyson, and relaxing.. till I fly out again the next Saturday (next stop east coast in CT).

Now.. I am kind of nervous for my weigh in in the morning. While I did work out daily, I dont "feel" like I lost, and I just had Pizza... ugh. Wish me luck! Well signing off from DIA!

Luck 'o the Irish

Happy St. Patties Day!

I hope you all enjoyed your day! The weather was pretty nice here in Norman! I took the secretary and biz manager out today to this darling little cafe and I had the most amazing quiche at La Baguette. I highly suggest it if you are in ever in the area!

Now in celebrating my Irish heritage, I sported my GREEN shirt!



Today was also my first time drinking Green beer. First off, I have been craving a beer lately. Being St. Patties I had to give in and take the calories! Plus it was free, so somehow that makes things taste so much better ;)

I got a good workout in, and even went to Sprint to get my stupid phone fixed. PS -- I can not stand my Palm. Its such a PITA. It's constantly screwing up now, and I am not about to drop $300 on a new one. I may use my brothers old phone, its an HTC Diamond.. until I can get something new if I keep having problems. Ugh.

MyPhatty Heaven

Yeah. They have Chick Fil A here. Actually MANY Chick Fil A's.

I love me some Chick Fil A. Perhaps it is because we dont have them in Omaha? I mean it was good (not to rub it in). The sandwhich (chicken was good but for some reason I remember it tasting better) maybe the calories I knew I was taking in hindered the taste. Now the waffle fries and Chick Fil A sauce omg yummo.

Now, I am back, going to hit the pathetic gym here. Last night when I worked out, I was driven half nuts. The girl on the treadmill kept coughing, it was rather annoying. Oh and she was watching some show on the history channel about some animals being cut up - sick. Needless to say I stomached my 30 min.

I am waiting for my dinner to settle and Im going to head down, and HOPE like hell shes not there again. I did enjoy the recumbent bike however. I WISH they had free weights I miss mine.. :( I have the option of going to the YMCA here, as part of my hotels thing, but I really dont want to GO. Its nice to just stay here. I have been running the stairs a few times too.

Well.. maybe I will get a photo of the gym so you can all see it's patheticness. Residence Inn Marriott - you can do better. :)

Holler for the card reader!

Greetings from Oklahoma!

My time here is going well, and I had the pleasure of visiting one of my besties! Caitlin and her fabulous hubby and darling dogs live up around Tulsa, which is about 2 1/2 hours Northwest of where I am. Tonight, we meet in the middle in Stillwater -- home of the OSU Cowboys... whoo hoo (not!).

We meet for dinner at Mexico Joes, must say it was pretty good. It was so nice to catch up with Caitlin - I so totally miss her! We were quite the partners in crime and the best prank callers in West O (Yes I am bragging about that!). While we may now be 26.. we still laugh about the good times when we were 17 & 18. Fun Fun times.

Caitlin got a souvenier cup. (I think she really just wanted to get it so she could remember her dinner with me)... Ha... EVERYONE who ordered pop got it! I told her to pose with the cup and the sign.. She thought I was joking till I told her to hold it up and then say "darn its not good lighting"... speaking of which please pardon the poor picture quality in this post!! This is not my photog blog! :)

Oooohklahoma

I am in Oklahoma!

In avoiding temptation (fatty quick food) I booked a Residence Inn, which has a little kitchen area! I ran to Wal-Mart to pick up some lunches/dinners. Now... I am a Husker fan so obviously I held off on staying at the Sooner Inn... but I wont avoid the sooner gear (even if this week is Spring Break!). So.. the WalMart in Norman (home of the OU campus) has a SOONER STORE...

Don't believe me?? Look...


Oh and PS... why don't the Nebraska Wally Worlds rep a Husker store?? Ohh... that's right we don't wear HUSKER gear ALL.THE.TIME. Seriously it looks like game day here folks.

Oh.. and I am driving a Toyota... my mom was instantly worried. But heck of a lot better than the crapbolt (Colbalt). I am not a fan of those. The trunk is barely enough to squeeze a suitcase in!

Truck'n along!

I've been good with my 40min a day! I've been doing 30DS and then a second video or cardio of some sort. Mornings just dont work... as much as I would LOVE them to... so we've been working out nightly before dinner... or around 8. Determining a time has worked for us.

I've been using my Clarisonic for a few days. I am certainly a FAN! Well worth every penny! I am also planning on a bueaty post in the next few days with my reviews of some of my favorite products... photographed with my new CANON 7D.. which will be here tomorrow!!!!!!!!! :)

Crazy town.

What... I'm a cop?

So today was an interesting day...

You're probably wondering WTF "What I am a cop means" well... look at this photo.


Go ahead, make it large. Laugh your tail off. It's ok.

I took the Touareg in to get something replaced at the dealership, and they had a car for me. I go outside with the rental guy from Enterprise (which PS WTF.. my HUSBAND is the dealerships IT Manager why didnt I get a car off the used lot?) Ok, I digress... and he points to a WHITE Grand Marquis (aka Crown Vic -- or a cop car). So the best part is, my co-worker and I are working together this week... well I told her I'd pick her up since she lives a few min from the dealership. So... we just start laughing -- like ha its a joke right?

No. No joke my friends.

So, I get in, its got the old school gear shifter on the steering wheel, a trunk that went on for days.. and a rather geratiric smell. So... we hop on the interstate to head to work... and really we looked like we stole our grandparents car. Oh and PS it had Illinois plates. So we were on a cross country trip too :) Its a BOAT to park... of course I couldnt paralelle park... in front of the office... so I had to park in the parking lot and hoof it. (Oh well).

So, we just kept laughin about being in our undercover cop car. Oh and I kept making WOoooWOoooOOO sounds (Think police siren). It was all fun and games until Performance called to say they had to keep my beloved T-Reg over night.

NO. I can not drive this rig another day. Now, I am not a divalicious girl. Really but come on. I DO not look like a should be in this car. I'd rather be rollin' in a hooptie. Oh well I just needed air suspension and some spinners and I could have been... haha.

So on my way home I was just annoyed. I was saying things like "move over I'm an under cover cop" and "I'm ridin' dirty" I was just so annoyed I cant even remember half of them. You might ask why one would be annoyed... umm... a dude was on the interstate (after he probably slowed down thinking it was a cop!) and he looks over at us and just chuckled... NICE... :) I did however get to switch cars out at Enterprise and I am now driving a Ford Escape... which is a bagillion times better.

Spring is around the corner!

It's so nice to begin to see the grass. Even though it my be super soggy.. I see it and its making me happy. I am really looking forward to getting outside and taking down the Christmas lights (Yes you did read that correct, they are still up. Ugh. Maybe we will try today. Most of the snow around the house has melted some. It's such a PITA to get them down, but its worth it to see Clark Griswold(ahem I mean Jon) happy. It will be nice to clean up the yard, get the gravel out of the garage and just enjoy spring and being outdoors. :)

In the mean time, I will keep finishing up the projects inside, which I am seeming to invent them as they come up weekly to keep occupied! :) Last night Jon and I did a little retail therapy. We went to Von Maur, and he got a new dress shirt (Holla on sale from $89 to $60!) Its very classy, he looks so good in dress shirts. I picked up some blush and primer from Chanel. I really like Chanel's products. This stuff is amazing. I was previously a smashbox fan.. but IMO it tears it apart. It is a few bucks more, but my last bottle seemed to go way faster than previously.


I also recently bought a Clarisonic. I am so excited for it to arrive! I got pink (of course!) and I picked up a brush set for Jon, he's excited to use it as well!!

Down 5!

I had an awesome week! I lost 5 lbs! That puts me at 18.8 total. YAY! I still have a long ways to go, but I am making great progress. I have a work trip coming up March 27th. It's been my goal from the get go to have lost 30 lb for that trip. That's three weeks away, and I think I can easilly do it. That's 11.2 in three weeks, which is totally attainable. SO yay!

This week I am going to hit it hard in the work out area. I realize this is an area I can work harder in. So I am planning to incorporate some new variety in this week. Probably 3 days on the elliptical with weights, 2 days on 30DS and 2 days of other work outs. I am a big fan of FIT Tv OnDemand. Love it.

Well, I have a laid back weekend planned! YAY! Probably going to do some cleaning and maybe errands -- exciting huh! :) Hope everyone has a GREAT weekend!

Tgif!

Happy Thursday!!!

It's been an AWESOME week at work. I had my best week EVER. I am at... $20,500! I still have a deal that should close tomorrow as well! YAY!

Diet wise, Ive been pretty decent the past two days sticking around 1300-1400 and fiber in the 30's.

I have also decided to plan out my workouts for the week. Since its getting nicer out (holler!) I can start incorporating more into my work outs.

Lastly - I encourage you all to take your supplements! I feel much better when I do! Heres to hoping for weight loss in the morning!

Meal Planning and back in the groove!

Ok, so I got the to-do list out. Thankfully I have accomplished things! This being one. I have made a meal plan for the upcoming week. Here is what’s on the menu. I am recommitting to getting my a$$ in gear, and working out – HARD. No half ass’n here.

Double Corn and Ham Casserole
recipe ingredients
CORN BREAD:
1/2 cup all-purpose flour
1/3 cup yellow cornmeal
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
1/2 cup 1% low-fat milk
1 Tbsp. vegetable oil
1 large egg white
CASSEROLE
:
6 ears shucked corn
1 1/2 cups fat-free, less-sodium chicken broth
1 cup diced lean ham
1/2 cup chopped green onions
1/4 tsp. salt
1/4 tsp. black pepper
1 cup shredded reduced-fat sharp cheddar cheese
1 large egg

recipe directions
Preheat oven to 400*F. Prepare corn bread: Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 4 ingredients (flour through salt) in a medium bowl; make a well in center of mixture. Add milk, oil, and egg white to flour mixture; stir just until moist. Spoon batter into an 8-inch square baking pan coated with cooking spray. Bake at 400*F for 18 minutes or until a wooden pick inserted in center comes out clean. Cool completely on a wire rack, and crumble into a medium bowl. Reduce oven temperature to 350*F. Prepare casserole: Cut off tops of corn kernels, and scrape the corn milk and remaining pulp from cobs using the dull side of a knife blade to yield 3 cups. Combine corn and next 5 ingredients (corn through black pepper) in a large saucepan, and bring mixture to a boil. Reduce heat, and simmer for 12 minutes. Remove corn mixture from heat, and cool. Combine the corn mixture, crumbled corn bread, cheese, and egg in a large bowl. Spoon the mixture into a 10-inch deep-dish pie plate or 2-quart casserole coated with cooking spray. Bake for 50 minutes or until golden brown. Let stand 5 minutes before serving.

Ultimate Enchilada Casserole
recipe ingredients
1 pound ground turkey
1/2 cup chopped onion
1/2 cup chopped green pepper
11/2 teaspoons dried oregano
2 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 tablespoon vinegar
6 medium corn tortillas
1 can (15 ounces) pinto beans, rinsed and drained
2 cans (10 ounces each) enchilada sauce, divided
1 cup shredded, fat-free cheddar cheese
1 can (101/2 ounces) reduced-fat, low-sodium cream of chicken soup
1 tablespoon chopped, canned green chiles
recipe directions
Preheat the oven to 350 degrees.
Spray a 2-quart baking dish with nonstick cooking spray.
In a large nonstick skillet, cook the ground turkey. Add the onion, green pepper, dried oregano, chili powder, garlic powder, ground cumin, cayenne pepper and vinegar; cook until the onion is tender.
Remove the pan from the heat.
Cut the tortillas into 1-inch strips and then into thirds.
Line the baking dish with half of the tortillas. Top them with half of the meat mixture. Layer with the beans, the remaining meat mixture, one can of enchilada sauce, cheese and the remaining tortillas.
In a small mixing bowl combine the soup, the remaining can of enchilada sauce and the chopped green chiles; pour the sauce over the tortillas.
Bake uncovered for 30 minutes or until the casserole is bubbly and heated through.

Cornflake Chicken
recipe ingredients
4 skinless, boneless chicken breasts, flattened
1 cup cornflake crumbs
1/4 tsp pepper
1/4 tsp salt
1/4 tsp poultry seasoning
1/2 cup skim milk
recipe directions
Combine cornflake crumbs and seasonings in shallow bowl. Soak chicken in milk then dredge chicken in crumb mixture. Place on baking sheet which has been sprayed with nonstick spray. Bake at 400* about 25 minutes or until lightly browned.

Tequila Lime Shrimp

1 lb jumbo shrimp
1 shot tequila
1 Tbsp. fresh lime juice
1 jalapeno pepper, seeded and minced
1 Tbsp. minced garlic
1 Tbsp. chopped cilantro
recipe directions
Combine all ingredients and marinate in refrigerator for at least 30 minutes.
Cook over grill or in a nonstick skillet sprayed with cooking spray, until done. Season with salt and pepper to taste, and serve with rice or pasta if desired.

Corn and Macaroni Bake
recipe ingredients
1 cup cooked elbow macaroni, rinsed and drained
1 cup frozen whole kernel corn
1 cup (one 8 ounce can) cream-style corn
3/4 cup (3 ounces) shredded Kraft reduced fat cheddar cheese
1 teaspoon dried parsley flakes
1/4 teaspoon black pepper
2 tablespoon Kraft fat free Catalina Dressing
recipe directions
Preheat oven to 350 degrees. Spray an 8 by 8 inch baking dish with butter-flavored cooking spray. In a medium bowl, combine macaroni, frozen corn, and cream style corn. Stir in Cheddar cheese, parsley flakes, black pepper, and Catalina dressing. Pour mixture into prepared baking dish. Bake 30 minutes. Place baking dish on a wire rack and let set 5 minutes. Divide into 6 servings.
HINT: 2/3 cup uncooked macaroni usually cooks to 1 cup.

1 large can (49 1/2 ounces) fat free chicken broth
1/4 tsp. garlic powder or 1 clove garlic, minced
1/8 tsp. pepper
1 cup frozen cheese-filled tortellini
2 cups coarsely chopped fresh spinach leaves or 1 cup coarsely chopped frozen cut leaf spinach

In large saucepan mix broth, garlic powder and pepper. Over medium-high heat, heat to a boil. Stir in tortellini. Reduce heat to medium. Cook 10 minutes. Add spinach. Cook 5 minutes more or until tortellini is done.

In a funk.

You read it. I am in a funk.

I need to get out of it. As I was pondering why, it *just* came to me. I NEED to get back to my to-do lists. Laugh you may... but seriously, I need to make my rental car reservation, and secure a hotel for my upcoming work trip to Norman, OK. I also need to do other work stuff, ugh.

On a good note, I got a new camera today. Number one, of two. For those who didnt know, I had a Sony A200. I sold it on Craigslist, (holla) and bought a Sony A700 I also officially closed my big deal at work... so Canon 7D here I come as well. EEEEEEEEEE!

Now, back to my funk. I have been getting 1600'ish calories a day. I have up to 1700, but I liked staying in the 1300 range. When I come home, I just havent felt like cooking dinner. Yet, I didnt bother to make a meal plan. I can consider this a learning experience. I NEED to PLAN. I also have been suuuuuuuper tired in the morning, actually I think its more of a combo of my out of control cute (and snuggly) dogs keeping me in bed. Damn them. But, come to the evening I just want to veg out. I Need to work out still, I am just in a funk, and I dont want to. But I will.
